Ingredients

  • 800 g of cubed peeled white potato
  • 1600 g of cubed peeled sweet potato
  • 12 slices of back bacon (all visible fat removed), chopped small
  • 190 g of cheddar, grated
  • 12 eggs
  • 1 salt and black pepper
  • 1 chicken or vegetable stock
  • 1 fresh chivesAdd the cubed white potato to a saucepan over a medium high heat
  • 1 Just cover with stock, bring to a boil and simmer until fork tender.
  • 1 Drain, season with salt and black pepper and mash with the 2 eggs
  • 1 Add the cubed sweet potato to a saucepan over a medium high heat.
  • 1 Drain, season with salt and black pepper and mash
  • 1 Preheat oven to 200c/400f (gas mark 6)
  • 1 In an oven proof dish
  • 1 Add the mashed sweet potato and smooth over.
  • 1 Add the mashed white potato and smooth over.
  • 1 Place in the oven and bake for 20 mins
  • 1 In the meantime spray a frying pan over a medium high heat with spray oil
  • 1 Add the bacon and fry until really golden. Remove and set aside.
  • 1 Once the potatoes have baked for 20 mins, remove and scatter on top the grated cheddar.
  • 1 Place bake in the oven for 10 mins until cheese is all melted.
  • 1 Sprinkle on top with the bacon and some chopped chives.
