Ingredients

  • 500 g (17.5oz) of lean stewing beef 
  • 11 large onion, chopped
  • 12 sticks of celery, chopped
  • 1300 g/10.5oz of chopped carrots
  • 1300 g/10.5oz of chopped swede (rutabaga)
  • 1300 g/10.5oz of cubed potatoes (I used Yukon golds)
  • 12 cups (480ml) of beef stock
  • 12 cups (480ml) of vegetable stock
  • 11 tsp of dried rosemary
  • 11 tsp of dried thyme
  • 1 salt and pepper to season
  • 11/2 tbs of white wine vinegar
  • 1 spray oilSpray a deep pot over a medium high heat with some spray oil, add the stewing beef and season with salt and pepper. 
  • 1 Brown the beef until slightly golden on the edges (do it batches, you don't want to overcrowd or the meat will not brown). Remove and set aside.
  • 1 Add the onion, celery and carrots, and a little stock to prevent any sticking if needed and fry until onion, is translucent.
  • 1 Add back in the beef, swede, potatoes, rosemary, thyme, vinegar, vegetable and beef stock.
  • 1 Bring to a boil and then cover and simmer for 2 hours.
  • 1 Season as need with salt and black pepper.
  • 1 Enjoy!!
  • 1 Set instant pot to saute mode, spray with some spray oil and add the stewing beef and season with salt and pepper.
  • 1 Brown the beef until slightly golden on the edges(do it batches, you don't want to overcrowd or the meat will not brown). Remove and set aside.
  • 1 Add lid, close valve, and set to 35 minutes high pressure. 
  • 1 Let pressure release naturally once it beeps. 
  • 1 Season as needed with salt and black pepper.
