800 g
of yukon gold potatoes (or similar potato), sliced into wedges (skin on)
1 spray
oil
11 tsp
of salt
11/2 tbs
of garlic powder
11/2 tbs
of dried parsley
1 salt
and black pepperAdd potatoes to a large bowl, cover with cold water and leave for approx 1 hour
1 Drain,
rinse thoroughly and pat completely dry with kitchen towel.
1 Preheat
oven to 220c/430f
1 Place
wedges in a large bowl, spray to coat with spray oil
1 Add
the salt, pepper, garlic powder and parsley.
1 Toss
to coat.
1 Line
a large baking tray with parchment paper.
1 Spread
the wedges out on the tray well spaced apart.
1 Bake
for 20 mins, take out, turn and then spray with a little more spray oil and bake for another 20 mins (40 mins total) until lovely and golden in colour.
1 Season
with more salt to taste if needed.
1 Serve
with your choice of main, or enjoy these just as they are with a salad.

I used the Cajun seasoning with my wedges, you could of course use another kind or create your own using salt, garlic powder, paprika, black pepper, onion powder, cayenne pepper, oregano, thyme, and red pepper flakes, but I would highly recommend getting your hands on some of the Spice’n’Tice ones if you can
