  • 400 g of uncooked diced chicken breast
  • 1 salt and black pepper
  • 1220 g of long grain rice
  • 11/2 tsp of onion powder
  • 11/2 tsp of garlic powder
  • 1640 ml of chicken stock
  • 1250 g of broccoli
  • 1120 g of cheddar, grated - 4 HEa's
  • 1 cooking oil spraySpray a frying pan over a medium-high heat with cooking oil spray. Add the chicken and a pinch of salt and black pepper and fry until lightly golden, remove and set aside.
  • 1 Spray the frying pan with some more cooking oil spray. Add the rice, onion and garlic powder and fry until the rice just starts to go translucent.
  • 1 Pour in the chicken stock, bring to a boil and then cover and simmer for 6 mins.
  • 1 Add the broccoli and chicken, cover and simmer for an additional 8 mins.
  • 1 Remove lid, add cheddar and stir until cheese is melted. Remove from heat, Cover and leave for about 8 minutes, until rice is cooked
  • 1 Serve and enjoy
