Ingredients

  • 450 g of raw baby potatoes
  • 1 chicken or vegetable stock to cover
  • 11 red onion, quartered and sliced thinly
  • 16 cremini mushrooms, chopped
  • 1 salt and black pepper
  • 1½ tsp of paprika
  • 1 couple of tablespoons of chopped Fresh Italian parsley
  • 1 Spray oilAdd the potatoes to a saucepan, just cover with stock
  • 1 Bring to boil and simmer until cooked (approx 10 mins)
  • 1 Drain fully.
  • 1 Spray a frying pan over a medium high heat with spray
  • 1 Add the onion and fry till softened.
  • 1 Add the potatoes, mushrooms, paprika and a good seasoning of salt and black pepper.
  • 1 Spray with some more spray oil and fry until the potatoes are golden.
  • 1 Stir in the fresh chopped Italian parsley
  • 1 Serve with your choice of other sides for a delicious Breakfast dish.
