Ingredients

  • 5 portions
  • 10 g protein and
  • 3 g fibre per portion
  • 1 hour
  • 6 portions
  • 2 tbsp olive oil
  • 1 tsp cumin seeds
  • 2 onions chopped
  • 2 beef tomatoes chopped
  • 2 cm pieces
  • 1 tsp ground ginger
  • 2 cloves garlic finely chopped
  • 2 green chillies finely chopped
  • 2 tsp turmeric
  • 2 tsp garam masala
  • 650 g sweet potato
  • 2 cm chunks
  • 500 ml vegetable stock
  • 1 400 g tin of chickpeas
  • 3 large handfuls of spinach leaves
  • 5 minute Satay Sauce
