Inspired by the left overs in my fridge, here is a quick and easy salad that I whipped up recently over the weekend featuring kale, sweet potato, avocado and grilled chicken
Place the sweet potatoes and red onion on a baking tray. So when I went mad and decided that everything was a bad egg and everyone from Birmingham was a bad apple, I wasn't really considering the fact that actually, the course of action I was undertaking was unsustainable
Warm kale salad with roasted sweet potato, red onion andpomegranate seeds. Instead of sweet potato you could also use pumpkin or carrots (in which case be prepared for a longer roasting time)
The time between Christmas and New Year is a strange one on the culinary front – there is a plethora of sweets, cakes, pies, biscuits and other rich pickings from the savoury buffet table, as well as piles of turkey no doubt and of course the Christmas cake and pudding that usually last well into Spring
In a large bowl add the chicken, cucumber, tomatoes, bacon, parsley, and lettuce and mix together. This is a really simple dish to pull together and works perfetly for take to work lucnhes
The recipe below takes some of the favourite Red Tractor Assured ingredients into a tasty curry recipe for you , the slow cooker is very much like the workhorse of the kitchen it takes the strain for you and does all the hard work whist you are doing other activities etc
It’s a bit more interesting than Chicken, but it’s something usually associated with Hoisin sauce, or sweet sauces, which, sadly are chocablock with syns which makes me very sad
ChickenandSweet Leek Pie. Pour the chicken mixture into an appropriately sized pie dish. This monstrosity is from Jamie's Dinners and doesn't look nearly as aesthetically pleasing as his but you know what

Sweet potato (butternut squash would be a good substitute) - peeled and cut into chunks. Its also a one pot dish which we love as it saves on washing up, the vegetable content is also infinitely variable depending on what you have in the fridge and frugal too as it uses the humble chicken thigh, this cut is normally much cheaper and much more flavourful than the chicken breast
So, tonight, I decided to cauliflower-ify my favorite tuber – and yum, yum, yum. Even though my Kale & Caramelized Onion Sweet Potato recipe was a huge hit at home, I really don’t like to make the same recipe for dinner twice in the same month
