This weeks healthy dinner is Salmon/Chicken, salad and spicy sweet potato wedges. Next weekend don’t follow an exact recipe – take an idea from a recipe book and see if you can create something similar that works for you, DONT following the recipe line by line, glance over the ingredient list, close the book, and get CREATIVE
I love thinking up combinations of things that can be roasted together to make a tasty and wholesome - and most importantly, easy - dinner that everyone will (hopefully) eat
I love potatodauphinoiseand the fact that you could just add smoked salmon to it (another Aldi purchase to recommend) and make a complete meal appealed to me
Don't try to substitute butter for something low fat and don't use single cream either- this is not a dish that can be made 'lower fat'- it is what it is, a fat and carb fest
I'll post a recipe tomorrow to use up the spare salmon which also uses pasta andbroccoli if you want to cook a little extra or you could always have in a sandwich with some mayo
Butter an oven-proof dish generously and spread the potatoesand milk in it. I love a good GratinDauphinois, I mean, what’s not to like about potatoesand cream with a hint of garlic and a beautiful melted cheese on top
The other GREAT thing about this recipe is that it is made with ingredients that most people will have to hand – tinned salmon, eggs and spring onions – although any other onions can be used in the absence of spring onions
I love potatoand onion soup, but my boys find it harder to take with the onion taste. I find soups fill me up when I hit a tempting binge cycle, so I make a lot of them as an emergency stand by
Coronation Potato Salad andLow-FatPan-Fried Garlic Hake Fillets. It’s basically the same recipe as the classic and traditional Coronation chicken, but, with potatoes instead of the chicken
This Syn Free Smoked Salmon andBroccoli Quiche is the perfect answer to lunch on a hot summers day. I love quiche, but sadly pastry and Slimming World don’t go
Brandade de Morue, French Salt Cod andPotatoGratin. I am writing this post from my hotel room in London, so this will be short and sweet as I am hunched over my laptop in the Wi-Fi lounge
