Ingredients

  • Ingredients for 6-8 mousses
  • 3 Egg whites
  • 50 g vanilla sugar
  • 300 ml double cream
  • 4 big spoonfuls of summer berries, defrosted
  • 1 tbsp caster sugar
  • Zest and juice of 1/2 lemon A handful of fresh berries, to decorate

  • 220 g unsalted butter, softened
  • 30 g icing sugar
  • 80 g caster sugar, plus extra for sprinkling
  • 30 g cornflour
  • 300 g plain flour
  • Zest of 1 lemon
