Ingredients

  • portabello mushrooms
  • 3 tbsp celery
  • 1/2 cup apple
  • 2 tbsp fine breadcrumbs
  • 1 tbsp parsley
  • 2 tbsp walnuts
  • 1 tbsp
  • 2 tsp lemon juice
  • 1/3 cup reserved chopped mushroom stems and celery; saute 2 minutes or until tender.Combine celery mix, apple and next 5 ingredients in a small bowl, stir well. Spoon 1 1/2 tsp apple mix into each reserved mushroom cap. Place mushrooms in a 15x10" jelly roll pan, bake at 350 for 15 minutes
  • 7 fl oz good white wine, preferably Chablis (I had cheap wine, not chablis, tasted grand)
  • 1 shallot
  • ½ a red onion
  • 1 bay leaf
  • 4 black peppercorns
  • 2 heads of broccoli
  • /6 oz cold unsalted butter
