Ingredients

  • vegetable oil for frying
  • 100 g shallots
  • 200 g glass noodles
  • 200 g large
  • raw peeled prawns
  • 200 g squid, sliced into 5mm-thick rings
  • 100 g minced pork (or meatballs, see the Notes)
  • 25 g dried shrimp
  • 3 Tbsp fish sauce
  • 4 Tbsp lime juice
  • 20 g mint leaves
  • 1 Tbsp palm sugar
  • 50 g peanuts
  • 1 red bird's eye chillies
