Ingredients

  • 2 tbsp light brown sugar
  • 500 g plums
  • 175 g butter
  • 175 g dark muscovado sugar
  • 70 g golden syrup
  • 70 g treacle
  • 2 large eggs
  • 200 ml milk
  • 300 g self
  • ½ tsp bicarbonate of soda
  • 1 tbsp ground ginger
  • 1 tsp mixed spice
  • 2. To make the cake
  • 4. Cool in the tin for ten minutes before inverting onto a wire rack to cool completely.
