  • 225 g self-raising flour
  • 1 tsp bicarbonate of soda
  • 1 tbsp ground ginger
  • 1 tsp ground cinnamon
  • 1 tsp ground mixed spice
  • 115 g butter, cut into cubes, plus extra for greasing
  • 115 g dark muscovado sugar
  • 115 g black treacle
  • 115 g golden syrup
  • 250 ml whole milk
  • 85 g drained stem ginger, finely grated (I actually just used a packet of crystallised ginger as couldn’t find the tube of stem ginger – it worked just as well!)
  • 1 egg For the icing
  • 50 g icing sugar, sifted
  • 1 tsp finely grated lemon zest
  • 1 tbsp lemon juice
