Ingredients

  • 4 as a starter
  • 1 squash roasted in chunks (butternut, harlequin or similar)
  • 1 sweet potato cut into chunks
  • 1 red onion sliced in half moons
  • 2 cloves garlic
  • 50 g creamed coconut
  • 1 red chilli chopped
  • Olive oil for roasting and sautéing
  • Salt
  • Red chilli flakes to garnish
