  • Ingredients
  • 1 onion 1 leek 350 g of baby new potatoes, scrubbed and chopped in half ( Or you could just use white potatoes, quartered)
  • 500 g chicken thigh fillets
  • ½ courgette, diced into medium chunks
  • 1 handful of green beans, trimmed
  • 8-10 small florets of brocolli
  • small handful of spring greens, thinly chopped or frozen spinach
  • 150 g of frozen peas
  • A little vegetable oil
  • A handful of chopped parsley ( You can also add mint, but this is optional)
  • 500 ml of reduced salt chicken stock
