Spring Rolls with Veggies, Herbs and Tahini Sauce

Ingredients

  • Tahini Sauce
  • 2 tablespoons tahini
  • 1 teaspoon chunk fresh ginger
  • 1 tablespoon miso paste
  • 1 tablespoon sugar or sweetener of choice (I used white sugar but like coconut sugar or maple syrup)
  • 2 tablespoons lime juice
  • 1 Thai red chili, seeds removed or you can use crushed chili pepper flakes or even Siracha
  • Water, as needed, for thinning
  • 4 pieces of mixed greens per roll ( I have used butter lettuce, romaine and iceberg)
  • 1 small beet, peeled and shredded
  • 1 carrot, peeled and shreeded
  • 4 cherry tomatoes, sliced
  • Julienned yellow squash
  • 2 mini sized bell peppers, sliced in rings
  • 10 basil leaves
  • 10 mint leaves
  • 1/4 c Cilantro leaves

  • I use
  • 4 pieces of greens
  • 1 T or so each of beet and carrot
  • 4 pieces of sliced tomato
  • a few pieces of julienned squash
  • 3 rings of bell pepper
  • herbs
