Spicy salmon and prawn risotto

Ingredients

  • 1 litre of vegetable stock - water + cube
  • 100 g of prawns - or about a third of a bag of frozen prawns
  • 200 g of fish - I used frozen salmon but smoked haddock works well in this - I defrosted two pieces.
  • 150 g of Arborio rice
  • 100 g mixed frozen veg
  • sprinkle of chilli flakes
  • 1 chopped onion - I used a red onion.
  • 2 sticks of celery - very finely diced.
  • 4 cloves of garlic - very finely diced
  • 30 g of grated hard Italian cheese - optional
  • 15 ml of oil
