  • 4 boneless chicken thighs
  • 1 tsp cayenne pepper
  • 2 tsp paprika
  • 1 tsp cumin
  • 2 garlic cloves
  • 2 tbsp olive oil
  • salt and freshly ground black pepper
  • 250 g small
  • baby tomatoes halved
  • 1/2 a cucumber
  • For the dressing
  • 4 tbsp plain greek yoghurt
  • 1 tsp freshly chopped mint
  • Salt and pepper
  • Pinch of caster sugar
  • 1. First take your chicken thighs and flatten out each one, then in a sufficiently large enough bowl add the cumin, paprika, garlic, cayenne, oilve oil and season with salt and pepper. Add the chicken thighs and mix thoroughly until well coated, then leave to marinate for a couple of hours or overnight if you can resist.
