Ingredients

  • 40 g cobnuts (1/3 cup) (can use hazelnuts)
  • 210 g plain flour (1 1/2 cups)
  • 70 g whole wheat flour (1/2 cup)
  • 1 1/4 tsp baking powder
  • 3/4 tsp ground cinnamon
  • 1/4 tsp ground cardamom
  • 1/2 tsp salt
  • 1/2 tsp bicarbonate of soda
  • 2 large firm pears, peeled and coarsely grated (1 cup)
  • 145 g granulated sugar (3/4 cup)
  • 3 TBS vegetable oil
  • 1/2 tsp finely grated lemon zest
  • 1/2 tsp vanilla extract
  • 1 large free range egg, lightly beaten
  • 1 large free range egg white, lightly beaten
