Ingredients

  • 500 g smallish boiling potatoes, sliced in half
  • 2 pinches of saffron threads (optional)
  • 3 tablespoons olive oil
  • 1 slice brown bread, cubed
  • 2 garlic cloves, unpeeled
  • 1/2 litre of vegetable stock
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried parsley
  • 200 g french beans, topped and tailed and sliced in half
