Ingredients

  • 2 tbsp extra virgin olive oil (or substitute butter)
  • 1 medium onion, chopped
  • 2 small garlic cloves, chopped
  • 1⁄2 tsp Aleppo pepper or paprika,plus more to garnish
  • 1 medium tomato, chopped
  • 1 tbsp tomato purée
  • 1 tsp dried mint (plus more to garnish)
  • 200 g red lentils
  • 40 g coarse bulghur (burghul)
  • 1 litre chicken or vegetable stock
  • Salt
  • Juice of 1 lemon, to garnish
