After many attempts at getting my bread not to have a crusty top and be nice andsoft. I have spent many a day looking at my note book with this recipe and playing about with the recipe
It has good coherence, is soft, flexible and moist. When I was researching breads I came across South American breads made with tapioca flour and cheese
The loaf had that real yeasty depth that you long for in sourdough and velvety soft centre with one of those crusts you use loving energy to bite apart piece by piece - in other words it was the perfect sourdough loaf
You can make bread rolls with exactly the same recipe as the whiteloaf but in this recipe I have added milk with the water to give a sweeter, softer flavour
using olive oil is better than flour, because it prevents from sticking and keeps the dough soft. The bread was soft, light, the crust was as it should be
So while I’m trying to build up my spice rack, I figured I’d take some Indian cooking baby steps and start with some simple Indian soft rotis (aka phulka) to pair up with a little something else easy I whipped up
These are lovely, softand pillowy bread rolls - delicious warm and buttered on the side of a hot bowl of soup, or as burger buns, or encasing juicy thick slices of sizzling butcher's bacon
Squeeze all the white chocolate down to the cut point. 120g (4oz) of whole wheat bread (2xHEb's). 130g (1oz) of white chocolate (8 syns). 1spray oilLightly toast the bread, then cut into chunks and place in an oven proof dish greased with some spray oil. 1In a bowl whisk together the milk, cocoa powder, eggs, sukrin and vanilla extract. 1Pour over the chunks of breadand gently mix to evenly coat. Set aside for 10 mins for the mixture to soak into the bread. 1Spray over the top of the bread with some spray oil and bake in the oven, until the bread is crisp on top, but still slightly moist underneath (approx 30 mins). 1In the mean time, place the white chocolate in a bowl over a saucepan of water and gently heat until white chocolate is melted. 1Add to a small ziplock bag and then snip off a small corner. 1Remove the bread pudding from oven and pipe the melted white chocolate across the top. 1Serve as is, or topped with quark mixed with sweetener and vanilla extract
Put the loaf in the oven and add a cup of water to the hot roasting tray. If the smell and taste don’t convince you, just take a look at the ingredients in your standard supermarket version
