  • 39 in San Francisco after listening to a pod of seals making a tremendous racket on the rocks by the pier. I remember that day as clear as if it were yesterday.
  • 500 g smoked cod or haddock fillets frozen
  • 250 g potatoes, peeled and diced into 1cm cubes
  • 1 onion finely chopped
  • 2 carrots, peeled and cubed
  • 1 stick of celery cut finely
  • 2 cloves of garlic
  • 1 tin of sweetcorn
  • 1 tin of chopped tomatoes
  • 1 glass of white wine
  • 250 g fish stock (chicken if you don't have any)
  • Salt and pepper
  • 200 g frozen prawns (or frozen mixed seafood)
  • 150 ml single cream
