Ingredients

  • 4 tbsp olive oil
  • 1 shoulder of lamb, bone-in, weighing about 2kg/4lb 7oz
  • 2 whole garlic bulbs, cut in half horizontally
  • 6 large shallots, cut in half lengthways
  • 3 celery stalks, thickly sliced on the diagonal
  • 570 ml/1 pint chicken or lamb stock
  • 400 ml/14fl oz dry white wine
  • 6 large tomatoes, skin and seeds removed
  • few sprigs fresh thyme
  • few sprigs fresh rosemary
  • 2 x 400g/14oz cans flageolet beans, drained
