Ingredients

  • 2 garlic cloves, crushed
  • 2-3 cm ginger, grated
  • 2-3 tomatoes 1 tbsp of ground almonds
  • 1-2 tbsp of curry powder
  • 1 tbsp garam masala
  • 1/2 tsp cumin
  • 1/2 tsp turmeric
  • 1/4 tsp nutmeg
  • 1 large onion, diced
  • 1 pepper, diced
  • 2 sweet potatoes, peeled and diced
  • 1 tin chickpeas, drained
  • 300 ml vegetable stock (Bouillon yeast free)
  • 2 courgettes, sliced
  • 2-3 handfuls of baby spinach
  • 1 cup of lentils (optional) good to thicken the sauce
  • 100 ml coconut milk
  • 1. Pre heat the slow cooker or add a little oil to a large ceramic pot and heat
  • 5. Add the spices and stir
