Ingredients

  • 3.5 L and

  • To serve 2 you will need
  • 6 skinless and boneless chicken thighs - cut into bite sized chunks
  • 1 red onion - sliced
  • 2 nice fat garlic cloves - peeled and finely chopped
  • 1 red sweet pepper - sliced
  • 4 rashers of pancetta - sliced into strips (fry it first to crisp it up)
  • 100 ml red wine
  • 400 ml passata (sieved tomatoes)
  • 1 Knorr Chicken stock pop - dissolved in a tiny bit of hot water
  •  
  • A good pinch of the following
  • Pimenton de la Vera (hot Spanish paprika)
  • dried thyme, dried oregano and dried rosemary, black pepper, dried chilli flakes
  • Dougalls Instant Thickening Granules
  • 1 x400g cannellini beans - drained
