  • 3 kg Boned and rolled pork shoulder
  • 1 x Onion, grated
  • 2 x Garlic cloves, crushed
  • 500 ml Chicken stock
  • 2 tbsp Granulated sugar
  • 1 tbsp French's American mustard
  • 1 tbsp Chipotle paste
  • 1 tbsp Apricot jam
  • 3 tbsp Cider vinegar
  • 1/2 tbsp Worcestershire sauce
  • 2 tsp Smoked sea salt
  • 1 tsp Ground black pepper
