Ingredients

  • 900 g of lean pork shoulder, cut into chunks 
  • 11 onion, halved and sliced
  • 11 cup (240ml) of crushed pineapple, canned ) - 7 syns 
  • 12 tbs of maple syrup  - 4 syns 
  • 12 cloves of garlic, crushed
  • 12 tsp of grated fresh ginger
  • 11/4 cup (60ml) of soy sauce
  • 12 tbs of tomato paste
  • 11 tbs of sambal oelek  (chilli paste)
  • 11/2 cup (120ml) of water
  • 11 red pepper, sliced
  • 11 green pepper, sliced
  • 1 1 tbs of cornstarch (or arrowroot or tapioca) - 1.5 synsAdd the crushed pineapple, garlic, ginger, sambal oelek, soy sauce, tomato paste, maple syrup and water to a bowl, and whisk to combine.
  • 1 Add the pork and onion to slow cooker, pour over the top the sauce and mix.
  • 1 Add lid and slow cook for 5 hours on high.
  • 1 Mix the cornstarch with a little water to make a slurry.
  • 1 Add this into the pork, along with the red and green pepper. 
  • 1 Stir to combine.
  • 1 Add lid and slow cook for a further 1 hour on high.
  • 1 Season with salt and black pepper as needed.
  • 1 Serve with your choice of sides
