Ingredients

  • 8 hour
  • 20 minutes in the oven
  • 2 lbs boneless pork shoulder
  • 2 dried ancho chillies
  • 1 tsp chipotle paste
  • 14 oz can chopped tomatoes
  • in tomato sauce
  • 3 large garlic cloves
  • 2 red onions
  • 4 squares dark chocolate
  • 1 tbsp smooth peanut butter
  • 1 tbsp sugar
  • 1 small cinnamon stick
  • 6 small flour tortillas
  • 3 oz grated cheddar cheese
  • 2-3 tbsp
  • 3. Add the chopped tomatoes, onion, garlic, chocolate, peanut butter and sugar to the food processor and pulse until the ingredients are well blended
  • 10. Sprinkle the chopped jalapeños and coriander over the enchiladas and serve warm
