Ingredients

  • 2 x Lamb shanks
  • 1 x Onion
  • 1 x Carrot
  • 2 x garlic cloves
  • 1 x Bottle of red wine
  • 1 x Lamb
  • stock cube
  • 2 tbsp Tomato puree
  • 2 tbsp Mint jelly
  • 1 tbsp Cornfour, mixed to a slurry
  • 1 tsp Dried mixed herbs
  • 1 tsp Caraway seeds
  • 1/2 tsp Black pepper
  • 1 tbsp Pomegranate seeds
  •  
  • For the Celeriac Mash
  • 1 x Large potato, peeled and cut into chunks
  • 1 x Celeriac, peeled and cut into chunks
  • 4 x Garlic cloves (we used smoked)
  • 40 g Butter
  • 50 ml Double cream
  • 50 ml Milk
  • 120 g Crumbly cheese, e.g. Lancashire.
  • 1 tbsp Chopped chive
