A veggie stew full of goodness is always a favourite with me, and this slow cooker purple sweetpotatoand chickpea stew is a great one to add natural rainbow colours to your diet
12 onions, quartered and sliced thinly. 1Add the onion and garlic and fry till softened. 1Add the sugar and continue to fry until caramelized. 1Add to the slow cooker. 1Spray the frying pan again with a little spray oil and brown the beef. 1Add this to the slow cooker with all other ingredients (except cornstarch). 1Add all the ingredients to a slow cooker and cook on low for 8 hours. 1Once cooked, remove beef with a slotted spoon and set aside. 1Add onion and garlic and fry till softened. 1Add brown sugar and fry till caramelized. 1Add beef and brown. 1Set to stew/meat and then allow a Natural Pressure Release. 1spoon out beef with a slotted spoon and set aside. 1Set to instant pot to saute and stir just till thickened. 1Add back in beef and serve
