  • Frylight
  • 500 g of peeled potatoes
  • 225 g chopped onions (frozen or fresh is all good)
  • 225 g thinly sliced leeks
  • 1 tin garden peas or 200g frozen peas
  • 2 crushed garlic cloves or dried garlic powder
  • 1 teaspoon dried thyme
  • 2 eggs 100ml of vegetable stock
  • 5 Laughing Cow light triangles
  • 45 g grated mozzarella (or whatever cheese you have in – check the amount you’re allowed as HEA though as it varies per cheese)
