Ingredients

  • 3 per serving
  • 100 ml Rubicon mango juice
  • 4 tbsp sweet chilli sauce
  • 2 tbsp soy sauce
  • 2 tsp minced ginger
  • 1 tsp minced garlic
  • 1 red chilli, thinly sliced, optional
  • 4 skinless, boneless chicken breasts mini fillets
  • Salt & Pepper
  • 1 tsp smoked paprika
  • 2 cups of brown rice
  • 1 cup sweetcorn
  • 1 stock cube
