It's really easy to put to together and this recipe makes 4 portions, perfect for extra lunches. Put the mix into a large casserole dish and then top with slices of mozzarella, to be sure you top with enough for your HE, weigh out 40g of light mozzarella each time and separate into 4 sections, so you know 1 section = 1 HE
