Ingredients

  • 500 g dried macaroni
  • 1 large head of cauliflower
  • For The Sauce
  • 2 eggs
  • 200 g reduced fat cheese (Cheddar), grated or shredded
  • 2 large cloves of garlic, chopped finely
  • 1 red onion, finely chopped
  • 1 roasted red pepper in brine from a jar (I couldn't resist)
  • 500 ml vegetable stock (bouillon)
  • 1 tsp English mustard powder
  • 100 g low fat cottage cheese (approx 2%)
  • 100 g fat free Fromage Frais
  • Olive oil spray (or other low calorie cooking spray)
  • salt and pepper
