Skate Wings Baked in a Lemon, Olive Oil and Caper Sauce Recipe

2 -3 tablespoons
Pinch of Mixed Fresh or Dried Herbs (we used herbs de provence)
splash white wine
Pre Heat oven to 180C (fan), then take a baking tray and cover in oil.
Place your skate in the tray and bake for 15 minutes, remove from the oven and cover with the butter, capers and herbs.
Squeeze the lemon juice over and add a splash of wine.
Return to the oven for a further 10 minutes.
To check it is cooked through, take a knife and make sure the flesh pulls away from the centre bone.
This dish is great served with new potatoes to soak up the sauce.

For the caramelsauce. Step 1 Inamixing bowl, weigh out the ingredients for the dough and mix together with a wooden spoon to form a dough. Step 2 Divide into 6/8 pieces and roll out thinly. Step 3 Place 2/3 in the fryingpanata time and cook for 2-3 minuteseach side to brown and cooked through. Step 4 Place on aservingplate whilst you make the sauce. Step 5 For the sauce. Step 6 Add the juice of 1 lemon and the castersugar to apan. Step 7 Leave to caramelise without stirring for 2/3 minutes. Step 8 Serve the Singin’ Hinny with a drizzle of the sauce. 6oz plain flour. 1/2 tsp baking powder. 1oz flakedalmonds. 1oz crystallisedginger. 4 tbsp castersugar
