The only problem is I haven't yet decided what would prove the best accompaniment for this kind of thing - new potatoes, perhaps, steamed and tossed in a knob of butter, or a lemony basmati rice or even mash (mash on the side is never wrong)
Heat the tsp oil in a small frying panand add the halloumi. Pick the seeds out of the pomegranate (trying not to spray yourself with the juice), fry the halloumi to give it some colour and make it a bit crispy and all you need to do now is assemble
Add the rice to the panand turn up the heat a little. Put a large pan over a low heat. Todays recipe is adapted from another of my favourite recipes, Jamie Oliver’s Asparagus, Mintand Lemon Risotto from ‘Cook with Jamie’
Heat the pan on high, until it begins to smoke. Once it begins to smoke, reduce heat to medium high and place steaks in, do not touch them until you're ready to flip them
