Karahi Chicken (or lamb and even beef), originates from Northern India/Pakistan and although there are a few variations, the basic version is always stir fried or sautéed chickenwithtomatoesand flavoured with a few spices and fresh ginger and chillies
Having looked up Chicken Marengo I see that it is supposed to include crayfish and fried eggs, as well as wine, none of which our dish ever had, so I think it is safer to refer to it as just "Chicken casserole with fresh tomatoes"
Cooked with the skin on, the chicken stayed beautifully moist, and the flavours combined really well - sweet tomatoesand molasses, sharp sherry and vinegar, soft couscous with little nuggets of crunch in the toasted pine-nuts, iron-rich cabbage and broccoli

Return the pan to the heat and add the chicken. Serve with jacket potatoes or rice and green veg. Again, return pan to heat and add the chopped tomatoes, puree/paste, herbs, seasoning and pinch of sugar - cook for a minute or two until gently simmering
It's a great recipe, just brown the chickenand throw in the tomatoes, garlic and olives and thyme. Nigel suggests chicken thighs for this recipe, but I bought a whole chickenand jointed it, I also used some green olives rather than the black ones in the recipe as I had half a jar left over from another dish
3 chicken thighs, sliced thinly in strips. 11 onion, halved and sliced. 12 vine tomatoes, peeled and chopped. 11/2 cup (120ml) of chicken stock. 1salt and black pepper. 1small handful of fresh chopped Italian parsleySpray a frying pan over a medium high heat with some spray oil, add the onion and fry for a few mins to soften. 1Add the chickenand garlic and fry till lightly golden. 1Stir in the tomato paste, pinch of paprika andtomatoes, reduce heat and cook for a couple of mins till the tomatoes start to break down. 1Add the stock, cream cheese and chopped fresh Italian parsley and stir until the cream cheese melts. 1Simmer until the sauce thickens and is nice and creamy. 1Serve with your choice of sides. 1I stirred through some cooked pasta, but it goes well with a various different sides
