Admittedly most days involve this even when I eventually go off plan, but I can’t stick to SlimmingWorld if I don’t have some kind of structure around my meals
well, what with doing my Wartime Kitchen and preparing for Christmas, I have not had time to post any mealplans, or indeed any of my new recipes, but, I am rectifying that today with a NEW recipe that’s just right for all the snow and frost we have been having over the last few days – a Scottish inspired Highland Stew
But back to my weekly mealplan, which is on Tuesday again, and I am late again……it is an odd week, as I have my daughter and her two friends staying for the week, so things will be a little flexible

I have mentioned before how much I love chorizo, we had some left over last week, along with a few leftovers hanging around in the veggie drawer so I decided to add a tray bake to our weekly menu, it used up all of the veg that was going to be thrown out and all it cost me was the price of some diced chicken and an aubergine
I’ve shared my ideas about SlimmingWorld mini egg omelettes here and here before but today, I made them in the Lidl Hot Air Fryer by using some little foil cake cases I bought last year and filling them with some shredded gamon, tomato, a dollop of cottage cheese and some whisked up egg
And although I would never normally opt for a bean chilli of any kind because I had an overkill back in my vegan days, this is actually one of the nicest ones I’ve eaten
