Ingredients

  • 1 medium to large marrow (or an overgrown courgette)
  • 600 g minced beef (or lamb)
  • 1 onion, finely chopped
  • 2 garlic cloves, fined chopped
  • 1 cinnamon stick
  • 2 bay leaves
  • A couple of sprigs of thyme
  • 1 teaspoon of paprika
  • 1 teaspoon of ground cumin
  • 1 can of tinned chopped tomatoes
  • Parmesan, for grating
  • A handful of chopped flat leaf parsley
  • 200 g cooked brown rice (optional)
