Ingredients

  • 1 level teaspoon
  • 200 g caramel
  • 110 g plain flour
  • 30 g cornflour
  • 70 g caster sugar
  • 105 g unsalted butter, softened
  • pinch of salt
  • 120 g granulated sugar
  • 60 g unsalted butter
  • 90 ml double cream
  • 1 teaspoon best quality sea salt, finely crushed. You can add more if you want; just go cautiously
