Ingredients

  • For the Base
  • 100 g Unsalted Butter, melted
  • 250 g Digestive biscuits (or graham crackers for our friends across the Pond)
  • For the Cheesecake Filling
  • 700 g Full-fat Cream Cheese
  • 120 g Caster Sugar
  • 1/2 teaspoon Vanilla Extract
  • 1/2 teaspoon Almond Extract
  • 3 Large Eggs
  • 80 g Unsalted Mixed Nuts (I used a mixture of peanuts, pecans, brazil nuts, hazelnuts and almonds)
  • For the Salted Caramel Caramel Topping (adapted from Nigella Lawson)
  • 75 g Unsalted Butter
  • 100 g Soft Brown Light Sugar
  • 50 g Golden Syrup (About 2 large tablespoons for anyone out there like me that finds it difficult to weigh syrup)
  • 125 ml Double Cream
  • 1 tsp Sea Salt
