  • 500 g plain sweet digestive biscuits
  • 60 g ground almonds
  • 150 g butter
  • 500 g ricotta cheese
  • 350 g cream cheese
  • 175 g dark brown sugar
  • 4 free range eggs
  • 15 ml spoon
  • s maple syrup
  • 2.5 ml spoon vanilla
  • 2 teaspoons vanilla extract
  • Caramel sauce
  • 250 ml single cream
  • 1 seeds
  • 1 vanilla pod
  • 60 g butter
  • 175 g dark brown sugar
  • Cream topping
  • 300 ml half fat crème fraiche
  • 1 tablespoon icing
  • 1 hour
  • 30 minutes or until firm to the touch
