Ingredients

  • For the salted caramel:Ingredients
  • 200 g caster sugar
  • 90 g butter, salted or unsalted, cut into 1 inch squares
  • 120 ml double cream
  • ½ - 1 tsp salt (to taste)
  • Salted caramel can be stored in a jar in the fridge and warmed before using. You will likely have more caramel than needed for the cheesecake (unless you really, really, like caramel).

  • For the cheesecake

  • Ingredients
  • 200 g digestive biscuits, blitzed in a food processor or with a hand blender
  • 120 g butter
  • 300 g cream cheese
  • 60 g icing sugar
  • 1 tsp vanilla extract
  • ½ teaspoon lemon juice
  • 250 ml double cream
  • salted caramel (see above), to taste
  • 150 g pecans (you may not need all of these)
