Gradually add the melted butter, just a few drops at a time to start with, whisking constantly, until you have a thick emulsion, then keep pouring it in a slightly faster, steady stream until it is all incorporated and you have a thick, glossy sauce

Season over top with salt and black pepper. 1approx 6 cups of spinach. 1Place potatoes in a saucepan of water, bring to a boil and simmer till very slightly soft (not too soft that they are mushy) - approx 8-10 mins. 1Drain and rough up with a fork and set aside. 1Spray a frying pan over a medium high heat with spray oil, add the chicken, season with salt and black pepper and cook until lightly golden. 1Mix the cornstarch with a little cold water to make a slurry, pour this into the sauce and stir until thickened and creamy. 1Add back in the chicken and stir in the spinach. 1Add the chicken and sauce to a an ovenproof dish. 1Spray over the top with spray oil, and place in the oven and bake until the potatoes are a lovely golden colour (approx 40 mins). 1Serve with your choice of vegetables
Throw in your tomatoes with a pinch of sugar and the creme fraiche. In the meantime cook your pasta and when ready, drain but keep back a small cup of the cooking water in case you need it to thin down the sauce
The pictures I’ve managed to get of this recipe are just not ideal, but my desire to share it with you overpowers my desire to look like I take really great pictures of food so whatever
Season the salmon pieces with salt and pepper. Add the salmon pieces, skin side down, pour some sauce over the fish and continue simmering for another minute
All I know that this is a great accompaniment to fish (particularly salmon and as pictured), asparagus (as pictured), eggs benedict and the basis of other great sauces such as bearnasie
