  • For the cupcakes
  • 4 TBS unsalted butter, softened
  • 150 g of soft light brown sugar (3/4 cup packed)
  • 1/4 tsp salt
  • 1 large free range egg
  • 1 tsp vanilla extract
  • 80 ml sour cream (1/3 cup)
  • 105 g of plain flour (3/4 cup)
  • 21 g of sifted cocoa powder (1/4 cup)
  • 3/4 tsp baking soda
  • 80 ml hot water (1/3 cup)

  • For the frosting
  • 28 g of unsweetened chocolate, finely chopped (1 ounce)
  • 4 TBS unsalted butter, softened
  • 115 g of icing sugar, sifted (1 cup confectioners sugar)
  • 3 TBS cocoa powder
  • 80 ml sour cream (1/3 cup)
  • 1 tsp vanilla extract
