(21oz) of yellow fleshed baby potatoes with skins
13 cloves
of garlic
190 g
(3oz) of parmesan (3xHEa's)
1 salt
and black pepper to season
1 fresh
chopped Italian parsleyAdd the potatoes (with skins) and garlic to a saucepan, cover with water and then place over a medium heat and bring to a boil. Cover and simmer for approx 12 mins until a fork slides through the potatoes easily.

from heat and drain.

I’ve used it to cook sausages , garlic dough balls, veggies and last week my crispy chicken thighs. Parmentier is a fancy word for cubed potatoes typically cooked in butter and/or herbs
600g of russet potatoes, sliced into fries (leave skins on). 11 clove of garlic, crushed. 1¼ tsp of garlic powder. 1handful of freshly chopped Italian parsley. 160g (2oz) of parmesans shavings (2xHEa's). 1salt and black pepper. 1Drain and blot dry with some kitchen paper. 1Place in a bowl with the garlic, garlic powder, salt, black pepper, parsley, and basil, spray with a little spray oil and toss to coat. 1Place in the oven and bake for approx 40 mins until golden and crisp. 1As they get golden, sprinkle with the parmesanand toss to coat. 1Place back in the oven until the parmesan melts and goes crisp over the fries. 1Serve with a side mixed green salad and my Low Syn Ranch Dressing
You can even cut up the sweet potatoes a few hours ahead of time, keep them in the fridge and then add the garlicand herbs and whack them in the oven when you are ready to eat
