Ingredients

  • Biscuit Base
  • 150 g Digestives
  • 150 g Vanilla Crunch biscuits
  • 125 g butter, melted
  • Cheesecake Filling
  • 500 g cream cheese, I used 250g mascarpone, 250g Philadelphia
  • 1 tsp vanilla bean extract
  • 100 g icing sugar
  • 150 g caramel – I use Carnations Caramel, about half a tin.
  • 300 ml double cream
  • 175 g Rolo sweets, chopped up
