Ingredients

  • 1 tbsp coriander seeds
  • 2 tsp cumin seeds
  • 2 tsp chana masala or garam masala
  • 200 g onions, peeled and quartered
  • 50 g root ginger, peeled and chopped
  • 12 whole cloves garlic
  • 4 red chilli, seeds removed
  • 3 tbsp vegetable oil
  • 1 tbsp ground turmeric
  • caster sugar
  • 2 x 400 ml cans coconut milk
  • 600 ml vegetable stock
  • 400 ml natural yogurt
  • 700 g sweet potatoes, peeled and cut into 2cm cubes
  • 6 parsnips, peeled and cut into 2cm cubes
  • 4 large carrots, peeled and cut into 2cm cubes
  • 1 leek, peeled and cut into rings
  • 4 onions, peeled and cut into eights
  • 150 g spinach, (any large stalks removed before weighing), chopped
  • bunch coriander, chopped
  • 100 g toasted cashew nuts, chopped
  • 200 ml yogurt, or crème fraîche
  • plain rice
