There’s nothing fancy or high-tech going on here, just a simple but failsafe method for perfectly crispy roast potatoes, infused with traditional flavours of garlicandrosemary

This side dish is just as good {if not better} than the classic, made with low-calorie almond milk, extra virgin olive oil infused withrosemary, and sweet, caramelized bits of roastedgarlic
Leaving the skins on the potatoesand sprinkling with parmesan ensures a crispy outside. These roast potatoes are crunchy on the outside and light and fluffy in the middle
When all nicely charred and softened, the veggies and herbs get blitzed in a blender with some hot stock, red wine vinegar, Tabasco sauce and Worcestershire sauce

They asked me to try them this week and I came up with this Garlic Parmesan Crushed Potatoes Recipe. This is my favourite and it’s just so brilliant for zesting lemons and grating Parmesan cheese without grating your fingers (on Amazon)
After starting blogging, I saw many recipes which use sweet potatoes instead of potatoesand that is when I got this idea of trying a savoury roast with them
Add to a large bowl and repeat with the other half. 800g (28oz) of white potatoes, peeled and chopped. 13 cloves of garlic, crushed. 1handful of fresh Italian parsley, finely chopped. 1Place potatoes in a saucepan of boiling hot water and parboil for 8-10 mins. 1Drain water, add half the potatoes to a metal sieve and carefully shake, so it lightly roughs up the potatoes on the edges. 1Add the garlicand parsley to the potatoeswith a couple of sprays of oil and toss to coat evenly. 1Line a large baking tray with some parchment paper and spread the potatoes out evenly. 1Place in the oven and roast until golden all over (approx 40 mins, turning over half way and giving another spray of oil if needed. 1Season well with sea salt
While simmering, put the potatoes back on the tray and into the turned off oven while still warm. Add in the water, along with the chilli powder, Cayenne, sugar and seasoning to taste
